FROM MY KITCHEN: Kinilaw

We have just celebrated the city fiesta and I am sure this dish is one of the many food fares that people have enjoyed. It's plain Kinilaw, but there are lots of variety. Take for example the Sinuglaw we had at Trellis n' Vines, or the Kinilaw from Yellow Fin Seafood Restaurant. But apart from that, Kinilaw is not only limited to fish. Remember the Kinilaw na Balat we ate in Kauswagan, Lanao? That's no fish, but Sea Cucumber.. 

Anyway, to make Kinilaw is easy.. All you have to do is prepare the freshest ingredients. Choose the type of fish, or whatever it is you want to make as Kinilaw.  The spices and flavorings used come differently by region, that's what I have observed. There are parts of the country which do not use the Tabon-tabon and Biasong as prime ingredients. There are also parts of the country which uses Calamansi or Lemonsito only, along with native cane vinegar. 

My Kinilaw recipe uses tabon-tabon, biasong, lots of ginger and onions. I used white vinegar because we do not have native vinegar here right now, or the orange colored vinegar with strong flavors. But if we had the native vinegar, it would have been better.

Fiesta Mood

So everyone has been in a festive mood since last week. Lot of activities and events happened already and well, on Sunday is the big day for Cagayan de Oro City as it is after all, the city fiesta.. I am sure everyone will have a grand time watching the fluvial parade as well as the races and the street dancing competition. There's also the parade of vintage cars.. And lots of food.. hehehe

A guy who bought tsw custom wheels said that he will go to the streets and flaunt his new ware, lol.. As for me and my household, we'll have to watch and see-- rather, wait and see, hehehe.. I am not sure if we will go to someone's place or not. But if you ask me, I would rather stay at home and rest.. I am also in a festive mood, but I do not find it practical these days..
