Pans Up Home Cooks! You #GataLoveJolly’s Coconut Cream and Coconut Milk

>> Saturday, March 25, 2023

Are you a big fan of gata-based dishes? If you’re someone who loves using the magic of coconut milk in your favorite recipes, then you’re probably familiar with how challenging it is to handle sometimes. Not because it is hard to cook with, but because of the preparation process when using it as an ingredient.
For example, if you are someone who prefers using freshly squeezed gata, then you might need to do the tedious task of squeezing your own coconut milk. If you’re lucky enough to get an already squeezed version from your suki at the market, however, then you usually need to use it as soon as possible to keep it from spoiling.
This can be a little challenging because it means that you always have to plan to cook your favorite gata dishes. But what if your loved ones want to have a taste of them stat and you don’t have time to run to the market anymore?
As a homemaker, cooking our family’s favorite dishes is one of the best ways that we show and express our love. There’s nothing more heartwarming than the thought of creating something that they can enjoy anytime when they want it. Jolly, the leading brand of packed fruits, vegetables and condiments, aims to answer common kitchen challenges by providing freshly packed ingredients straight to the pantries of homemakers without sacrificing quality. In the case of coconut-based dishes, the brand has two standouts that can finally give moms the chance to cook their family’s gata favorites anytime— Jolly Coconut Milk and Jolly Coconut Cream.
Both ingredients are made with 100 percent real coconuts and are packed with the creamy goodness of fresh gata that is as good and flavorful as the ones you get from the market. Coconut Cream or Kakang Gata has a thicker and richer consistency because it is made from pressing four parts shredded coconut in one part warm water while Coconut Milk (Gata) has a more liquid consistency (similar to cow’s milk) that is made from pressing one part shredded coconut in one part water.
Gata, regardless if it is in cream or milk form, is very versatile on its own. Whether you and your family are craving savory or sweet dishes, there is definitely a recipe where you can use this wonder ingredient. Coconut cream is perfect for savory dishes because its consistency provides a creamier and richer texture common in curries,. Use it for standout Pinoy favorites like Ginataang Isda, Chicken Curry, Ginataang Gulay, Bicol Express, and Laing. Check out our very own recipe for Bicol Express using Jolly Coconut Cream below.

Bicol Express
Ingredients:
3 to 4 tablespoons canola oil
6 cloves garlic, finely chopped
1 large onion, thinly sliced
1 small ginger, finely chopped
1 can Jolly Whole Mushrooms 400g, drained and quartered
1/2 kilo pork belly, cut into cubes
1 tablespoon shrimp paste
250mL Jolly Coconut Cream
1/2 cup water
3-5 pieces siling labuyo, sliced
Procedure:
Heat oil in a pot over medium heat then sauté garlic, onion, ginger, and Jolly Mushrooms.
Add cubed pork belly and cook until the pork turns brown. Add shrimp paste.
Add Jolly Coconut Cream and let it simmer for 10 minutes. Add water if the sauce becomes too thick.
Add chopped siling labuyo. Remove from heat and serve with hot steaming rice.
Coconut milk, on the other hand, has a unique taste and texture that can give your desserts and beverages a distinct flavor. Crack open a can of it if you’re craving sweet goodies like Maja Blanca, Bibingka, Ginataang Bilo Bilo, Biko, and Ginataang Mais. Here’s our very own recipe for Maja Blanca using Jolly Coconut Milk.

Maja Blanca
Ingredients:
2 cans Jolly Coconut Milk 400ml
1 1/2 cups fresh milk
1 cup cornstarch
1 cup sugar
1/2 cup cheddar cheese, grated
1/2 cup latik
1 can Jolly Whole Corn Kernels 425g, drained
1/2 cup cheddar cheese, grated (for topping)
Procedure:
Combine Jolly Coconut Milk, fresh milk, cornstarch, sugar, cheese and Jolly Whole Corn Kernels in a mixing bowl and stir thoroughly.
Place in a large saucepan and cook while stirring constantly over low heat until thick.
Pour into small mold containers. Cool, then refrigerate until firm.
Top with grated cheese or latik.
As a brand that has always been dedicated to providing high-quality ingredients to Filipino households, Jolly allows homemakers to show their care to their families through hearty, memorable dishes that they can cook anytime. Jolly Coconut Cream and Coconut Milk, in particular, are a true testament to this brand promise because they come in easy-open cans that can be easily stocked in our pantries for times when we want to cook our favorite gata dishes. Not only are they high-quality because they are made from one hundred percent real coconuts, they are also irresistibly creamy so you can expect to enjoy the same goodness from the ones you get from the market. You #GataLoveJolly for that, don’t you think?

Khao Khai Introduces Thai Street Cuisine in BGC

>> Sunday, March 12, 2023

BGC branch is Khao Khai’s 7th in Metro Manila, weathering the pandemic
The Thai diner concept Khao Khai “Thai Chicken House”, which introduced the authentic and unbeknown flavors of Northern Thai cuisine in the Philippines, has recently unveiled its new branch located at 2/f Crossroads, Bonifacio Global City.
First opened in Poblacion, Makati in 2019, Khao Khai has expanded into a portfolio of seven branches all through the course of the pandemic – the most challenging years in the restaurant industry.
Owned and operated by Making Fine Group, the same F&B group behind Tiger Sugar, Gram Cafe & Pancakes, and Chunky Boss, its growth is being driven by the warm reception of the local dining crowd to some of the least known flavors of Thailand from Chiang Mai and Isan – one that goes beyond the usual Pad Thai or Green Chicken Curry.
In fact, diners coming to Khao Khai will not find the usual Thai staples on the menu. Instead of Pad Thai, Bagoong Rice, or Tom Yum, they will find Phat Mama, or ramen noodles stir dry; Seafood Khao Soi, a classic and aromatic Northern Thai soup with coconut curry broth, fried egg noodles, shrimps, and squid; Red Beef Curry, which are beef sirloin strips cooked in garlic and red paste with a hint of lime and aromatic Thai lemon grass; and Yaowaraj Fried Rice, or Thai-style chicken fried rice.
At the heart of Khao Khai’s menu is its selection of fried and grilled chicken. Their signature Gai Tod fried chicken is battered and done carefully, ensuring the right moisture in the poultry to achieve the perfect outside crisp and a surprisingly flavorful and juicy meat. Meanwhile, Khao Khai also features a Thai grilled chicken dish called Gai Yang, a popular street food in Isan, marinated for nearly half a day before grilling.
Yet the unsung heroes in Khao Khai may not just be the food, but the sauces, many of which the restaurant does from scratch. Sauces are fundamental to Thai cuisine, and a number of dishes served – most importantly the grilled and fried chicken – are paired with two important ones: the Nam Jim Jaew (fish sauce with herbs and spices, prepared at least 8 hours before service) and Nam Jim Kai (homemade sweet chili sauce).
A roll of sides and salad will further parade across the table as diners enjoy many of Khao Khai’s delicacies, including Som Tam and egg salad sauce – allowing guests to appreciate the unique flavors in these parts of Thailand.
From Som Tam Platter (hand-cut papaya salad) in the vegetable selection to Mango Sticky Rice as an ending to a great meal, Khao Khai brings not just flavors but also the Thai street experience in every restaurant, evident with design that dons all branches and the aromatic and flavorful smell that makes for a signature dining.
Khao Khai is located in six other branches in Poblacion, Makati; Del Monte Avenue, Quezon City; Mall of Asia; Santolan Town Plaza; SM Manila; and SM Fairview.
Deliveries are available via Food Panda and Grab Food.

LIME DOUGHNUTS
Donuts are never a miss if you have a sweet toot. Make your own handcrafted donuts at home by following this recipe.
975 g  Flour, All Purpose
1.5 g  Groceries, Yeast
20 g  Sea Salt
100 g  Refined, sugar
8 pcs  Eggs, raw
220 ml  Water
130 ml  Dairy, Full Cream Milk
900 g  Dairy, Unsalted Butter
60 ml  Groceries, Buttermilk
20 ml  Juice, Lime
1.5 g  Salt, Kosher
300 ml  Vegetable Oil
400 g  Lime
Doughnut Procedure: In a medium bowl, whisk together the eggs, water, and milk. Whisk in the butter. Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until the liquid is absorbed and there are no lumps. The mixture will resemble muffin batter. It may look a little lumpy and slightly greasy but be assured that all of the butter will be absorbed by the time the dough rises. Cover the bowl with plastic wrap and let it rest at room temperature for 4 to 6 hours.
Uncover the bowl and use a rubber spatula to gently loosen the dough from the bowl. Dampen your hands with cool water and slide one hand under one side of the dough. Fold that side of the dough into the center and press it down gently so it adheres to itself. Give the bowl a quarter turn and repeat the folding process two more times. After the fourth fold, flip the dough over so the seams are on the bottom. Cover the bowl with plastic wrap and let it rest at room temperature for 8 to 12 hours, or overnight.
Uncover the bowl and repeat the folding procedure in the previous step. Put the dough onto a plastic wrap–lined baking sheet. Cover the dough with plastic wrap and pat the dough into a flattened dome. Refrigerate the dough until it is firm, at least 2 hours and up to 2 days.
Line 3 baking sheets with parchment paper and lightly dust them with flour. Remove the dough from the refrigerator and dust a countertop lightly but evenly with flour. Turn the dough out onto the floured countertop and dust it with flour. Use a rolling pin to roll the dough out to a 3⁄8-inch (9 mm) thickness. Use additional flour if it begins to stick. Use a 3-inch (8 cm) doughnut cutter to cut out the doughnuts and put them onto the parchment-lined pans. Separate the holes from the doughnuts so they may be fried separately. Cover the pans loosely with plastic wrap and let the doughnuts proof for 1 hour. Gently ball up the trimmings from the doughnuts, put them in a bowl, cover with plastic wrap, and refrigerate until they firm up, at least 1 hour or up to 24. These trimmings may be rerolled to make additional doughnuts.
Pour 2 inches (5 cm) of oil into a large pot and heat it over medium-high heat until it reaches 350F (177C). Set a wire rack over a baking sheet. Put 4 to 5 doughnuts at a time in the oil and cook for 1 minute. Use a slotted spoon or spider to flip the doughnuts over and cook them for 1 minute on the other side. Flip one more time and cook for 1 minute more. The doughnuts should be golden brown. Use the slotted spoon to transfer the doughnuts from the oil to the rack to cool. Repeat to cook the remaining doughnuts. To cook the holes, put 12 into the oil at a time and cook for 45 seconds. Use the slotted spoon to turn the holes over and cook for 45 more seconds. Some of the holes may not flip, so use the slotted spoon to stir them in the oil so they cook evenly. Transfer the holes to the wire rack.
Lime Glaze Procedure: Put the confectioners’ sugar in a bowl and pour in the buttermilk, lime juice, and salt. Use a whisk to stir the mixture together until it forms a smooth glaze. Reserve at room temperature and whisk until smooth before using.
Dip one side of each doughnut into the glaze, then flip glaze side up and return to the cooling rack.
Grate the zest of 3 of the limes over the glazed doughnuts.
Once all the doughnuts are glazed, put the doughnut holes into the bowl with the glaze and grate the zest from the remaining lime into the bowl.
Use a spoon to mix the holes in the glaze and evenly coat them.
Transfer the holes to the wire rack and let the glaze harden. Serve once the glaze is firm to the touch, if you can wait that long.

This is actually very good. Only tastes this here in Myanmar.
