SERENDIPITY CHICKEN...

Serendipity means something discovered along the way... This chicken recipe was not planned. I was supposed to only cook this in my oven toaster, and that's it! But, something delicious happened to it...

Last Tuesday, Lili wanted me to cook chicken. So I made her one. This chicken is cooked using only my handy dandy oven toaster. Here is how I did it:

First, I marinated the chicken with my personal marinade of garlic, calamansi and some spices. The chicken was then placed in the refrigerator for a day. When Lili wanted the chicken, I of course had to thaw it in the oven toaster. When it was thawed, I got the other pan (another pan was used to thaw the chicken, okay---) with the remains of the Slers Longanisa I cooked earlier for breakfast. The oils from the longanisa was the one I used for the chicken. Somehow, it added flavor to my chicken... Cooked it at 15 minutes twice... When it was done, I took the chicken off the pan and tried to cook scrambled egg. I continuously beat the egg in the pan until it became a custard, lol... Funny.. Not knowing what to do about it, I poured the egg custard over the chicken--- and guess what? It was oh so yummy...

This is how I served it to Lili... The cup I placed the egg custard in, was what I used to form the rice mound, so you can see the custard remains on top of the rice here...



Talk about cholesterol? The chicken were mostly meaty, less skin that gave out less chicken fat. The fat in the pan was mostly from the spicy longanisa mixed with a little chicken fat perhaps, scrambled with the egg--- that formed a custard... or maybe because when I scramble my egg, I add a little milk and cheese, that's why, lol... Oh I don't know-- One thing I know, this is a very delicious accident in the kitchen, lol...

FOODIES AT BUNS & PIZZA

My friend Joy, the police woman, and I had our girls night out last Friday--- Actually, it served as a breather for the two of us. There was no class at the Bukidnon State University because MOGCHS have suspended classes already due to the Influenza A H1N1 pandemic, hence we could not use the school facilities. I was glad I was given the chance to relax and chill with friend Joy who was also needing a breather for her very hectic schedule. It was a good chance to catch up on each other's lives... We went to Divisoria to enjoy the Night Cafe but we do not feel like dining in the open air so we needed to find a place where we could talk and eat that is just right for a mother's budget, and we found Buns and Pizza along Velez St. Below is what we had.




The very cold tea at P 50.00 (about $1 plus)


The garlic bread to match the spaghetti (I forgot to snap the pasta)
About P 60.00 or $ 1.10


French Fries at P 20.oo or less than $1


Pizza Perfect at P 310.00 only or $ 6.90

The Pizza ordered was family size because we were expecting Maryjean and Ella Grace to join us also, but they did not make it so we ended up dividing the remaining foodies for pasalubong to our chikitings...
