Healthy Salad with Home made Dressing

Yummy, isn't it? This is from the Salad my sister Sweet has made during our Media Noche. After eating too much calorie-heavy foods during Christmas and the New Year, it is always refreshing to look back into this salad. 


The plate above was actually my first meal of 2016, and it is truly healthy. Best fitting to my New Year's resolution, hehehehe.. Anyway, what's in it? There are Apple slices, Grapes, Carrots, Organic Lettuce, Zucchini and some Red Onions. Below is how it was arranged.

The ring of Salad reminds me of Masonic rings...the Masonic rings my Uncle Ben left behind in his passing. For no reason, I do not know why I associate these masonic rings in mind, to the presentation of the salad.. I guess I just miss my Uncle Ben so much.. We always had great holiday memories with him, since when we were kids, and even when we were growing up.. 

Anyway, before I get overly sentimental about it, let me share with you how I made the dressing. The process is similar to making home made mayonnaise. Only I used two egg yolks and eight pieces huge Calamansi, and half a cup Canola Oil.. With the choice of ingredients, that is fairly healthy too. Hope you like it..

I am feeling bloated, and decided to have these for lunch.. 


For P 78, this is what I got at some Carenderia nearby.. Fish, Ginataang Langka and rice. plus a free bowl of soup..
