Baked Malay Chicken in Peanut Sauce

>> Sunday, January 4, 2015

First marinate the chicken breasts for an hour or longer.. For the marinade, we prepared soy sauce, lemon juice, garlic, shallots, lemon grass (the white part only), oyster sauce, coriander, turmeric, and ginger.

Bake the marinated chicken breasts for 25 minutes...

Instead of preparing the tedious Peanut Sauce, we simply reheated the ready to use Peanut Sauce we bought in Singapore from our last travel..

The peanut sauce was quite dry so we mixed the sauce/drippings from the baked chicken, which had been cooked alongside the chicken.. That way, the flavors blends perfectly...

Just one cup of rice???? You guess... hahahaha...

Yum yum..

Golden Banana in Dark Chocolate Sauce

A lot of recipes can be made more exciting by adding chocolate. Here's one that is made with love for the non-chocolate lovers at home....

The usual recipe of Golden Banana or Cream Banana has both become boring and too sweet, that we do not like it anymore. Having bought Selbourne chocolate before Christmas, I have known that I shall be making goodies made of chocolate or with chocolate as one of the ingredients..

And in fact, this is the simplest and with less ingredients compared to the two recipes I mentioned above. Here all you will need are the bananas, water and dark chocolates for the sauce. No extra sugar or creams that can be harmful to the body. With dark chocolate, it's actually a healthier, yummier option..
